Recipe: Goat Cheese and Spinach Stuffed Chicken Pinwheels with Prosciutto

Ingredients:
- 4 organic chicken breasts
- 1 cup organic frozen spinach, thawed and drained
- 4 ounces goat cheese
- 2 cloves garlic, minced
- 1/4 cup diced onion
- 1 tablespoon chopped rosemary
- 4 slices prosciutto
- Kitchen rope or cooking pins for securing

For Lemon Chicken Sauce:
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon butter
- Salt and pepper to taste

Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a mixing bowl, combine the thawed spinach, goat cheese, minced garlic, diced onion, and chopped rosemary. Mix well until all ingredients are evenly incorporated.

3. Pound each chicken breast to an even thickness, about 1/4 inch. This helps the chicken cook more evenly and makes it easier to roll.

4. Spread a generous amount of the goat cheese and spinach filling onto each chicken breast, leaving a small border around the edges.

7. Heat a large oven-safe skillet over medium-high heat. Add a bit of oil or butter to the skillet and sear the chicken pinwheels on all sides until golden brown.

8. Transfer the skillet with the seared chicken pinwheels to the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

9. While the chicken is baking, prepare the lemon chicken sauce. In a small saucepan, combine chicken broth, lemon juice, butter, salt, and pepper. Heat over medium heat until the butter has melted and the sauce is warmed through.

10. Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Remove the kitchen rope or pins before serving.

11. Drizzle the lemon chicken sauce over the chicken pinwheels or serve it on the side for dipping.
