Orange Olive Fennel Chicken Stew

- Juice and zest of 2 oranges

For the cauliflower mashed potatoes:

- 2 cloves of garlic
- 2 tablespoons of fresh rosemary, finely chopped
- 2 tablespoons of pasture-raised, grass-fed butter
- Salt and pepper to taste
